Today, we present you Paco Roncero.
Paco Roncero is a Spanish chef. He won La Real Academia de Gastronomía’s National Gastronomy Award in 2006, and he was a judge on the reality television show MasterChef Colombia.
He is the head chef of Sublimotion, known for its high cost yet unique dining experience.
What would you like to highlight about Mr. Joel Robuchon?
Two things — the kitchen and the dining experience — which have been undoubtedly one of the best in the world. 25 Michelin stars? No surprise there!
Have Michelin stars somehow encouraged your self-improvement?
No… our everyday customers are also our biggest challenge, but what Michelin stars certainly give you is satisfaction, pride, and responsibility.
Finally… your favorite dish, either yours or someone else’s?
Madrid stew… and that’s it!
